Goddess in the Kitchen

This is one of my all time favorite salad dressing and a fabulous way to use up fresh herbs! It is a lighter version of the classic thickened with yogurt. Creamy, colorful and bursting with flavor. I love making big farmers market salads with this dressing: Greens, roasted asparagus, fresh strawberries, cherry tomatoes, avocado, walnuts, torn purple basil, grilled chicken or salmon. The possibilites are endless!

Green Goddess Dressing
Adapted from Katz & Co. recipes

  • 1 small clove fresh garlic, minced
  • 1 anchovy fillet, chopped
  • 1 extra large egg yolk
  • 1/2 cup parsley leaves
  • 1 tablespoon fresh tarragon leaves
  • 2 tablespoon fresh chives, chopped
  • 6 to 8 leaves of fresh basil
  • 1/2 lemon, juiced (Meyer lemon, if possible)
  • 3 tablespoon Katz Sparkling Wine Vinegar
  • salt and pepper
  • 1/4 cup Katz Chef's Pick Organic California Extra Virgin Olive Oil
  • 1/4 cup Katz Meyer Lemon Olive Oil
  • 1/4 cup yogurt, plain and good quality

Place all ingredients, except the oils and yogurt, in a blender and run until well blended. Slowly add the oils with the blender running until emulsified. The consistency should be between a vinaigrette and a light mayonnaise. Pour into a mixing bowl and whisk in the yogurt. Adjust seasoning. Will keep its bright color for a few days refrigerated. Enjoy!

I discovered Katz oils while living in San Francisco. I now have them shipped on a regular basis. I highly recommend their products and the recipes on their website are healthy and delicious! Their meyer lemon olive oil is something special.

Sweet Greens

The past few months I have really noticed a change in my health. I attribute a good deal of it to the fresh pressed juices I have added to my diet. Green juices in particular. My skin is clearer, my hair shinier and I am full of energy. I love my greens sweet with lots of apple and cucumber. This is a basic recipe. Feel free to adjust it to taste adding lemon, ginger, celery...

Sweet Greens

1 large muttsu apple
1-2 cucumbers
A large handful of each : kale, spinach and romaine
parsley

Run all ingredients through the juicer. Alternating between leafy greens and watery fruits and veggies.

Juicing at home requires equipment and can be messy. There are lots of amazing juice bars in NYC. Organic Avenue and Liquteria are my favorites!
